Pininyahang Manok is a beloved Filipino dish featuring tender chicken pieces simmered in pineapple juice and creamy milk or coconut milk.   1. 1. Marinate:

    In a bowl, combine chicken pieces and half of the pineapple juice. Marinate for 30 minutes for better flavor.

     

    2. Sauté the Aromatics:

    Heat oil in a pan over medium heat. Sauté onion 🧅 and garlic 🧄 until fragrant and translucent.

     

    3. Add Chicken:

    Add marinated chicken (reserve the marinade) and cook until lightly browned on all sides.

     

    4. Simmer:

    Pour in the reserved pineapple juice and add fish sauce (or soy sauce). Cover and simmer for 20–25 minutes or until chicken is tender.

     

    5. Add Vegetables and Pineapple:

    Add carrots, bell peppers, and pineapple chunks 🍍. Cook for 5 minutes or until vegetables are slightly tender.

     

    6. Make It Creamy:

    Pour in evaporated milk (or coconut milk). Stir and simmer for another 5–8 minutes until the sauce thickens. Season with salt and pepper to taste.

     

    7. Rest and Serve:

    Let it rest for 10 minutes before serving. Garnish with green onions and serve hot ♨ with steamed rice 🍚.
